Journal of Interdisciplinary Undergraduate Research

All of us were affected by the events of 2020 and The Journal of Interdisciplinary Undergraduate Research (JIUR) was no exception. Just as we were working hard to finish up our twelfth edition of the journal, the students at our university left for spring break and did not return to campus as the COVID-19 pandemic hit the United States. As it did in many areas of life, this threw a monkey wrench into our work and made it more difficult to communicate with authors, editors, and printers and unfortunately, the edition was delayed.

Over the summer, the administration at Southern Adventist University worked hard to develop plans that would allow students to return to campus safely and we have been blessed to have had minimal impact from the pandemic during our Fall 2020 semester. This allowed our staff to get back to its work of producing the JIUR and its sister publication The Journal of Interdisciplinary Graduate Research (JIGR). Though it was delayed, we are proud to present this selection of high quality articles from our undergraduate students at SAU.

I am thankful for the work of our graduate assistant Antannia Aguilar, a student in our Master's Program in School Counseling. Antannia has worked diligently to get this publication to print. We are also grateful to our editorial board who gave their time to review submitted manuscripts and make recommendations to authors. We are so grateful to: Dr. David Nelsen, Biology; Dr. Nina Nelson, Social Work; Dr. Keith Snyder, Biology; Dr. Linda Tym, English and Southern Scholars; and Dr. Ruth Williams, Psychology, for their commitment to the JIUR and their contribution to this edition.

Finally, we are also grateful for the administration at Southern Adventist University especially in the school of education and Psychology, for their continued support and encouragement, as we strive to continue producing this journal, which serves as a showcase for the excellent work of our students.
